Kyocera Revolution 7″ Ceramic Chef’s Knife Review

Kyocera Revolution 7 inch Ceramic Chef's Knife - BlackCeramic knives present a unique set of tradeoffs. On the one hand, they are sharp, lightweight and stainless. On the other, they are brittle and difficult to resharpen.

Let’s take a closer look….

The hardness of ceramic means it can be made very sharp. This Kyocera, for example, will almost certainly be sharper than a high-end Wusthof or Henckels.

Ceramic is also stainless and lightweight. This makes for a very convenient knife — no rushing to clean it the minute you’re done chopping. And it won’t produce fatigue after long food prep sessions.

Another great thing about ceramic is that it retains its edge for a very long time. So much so that you’ll probably never need to worry about resharpening it. When you do need it resharpened, you’ll need a professional since ceramic is tricky to resharpen.

Now for the downsides:

Because ceramic is so hard, it’s also brittle. This has two consequences you should be aware of.

First off, ceramic knives can’t be made quite as sharp as the sharpest high-end steel knives. The edge just can’t be made that thin without breaking.

And second, it can shatter. Drop your ceramic knife on the floor and it’s likely to chip or shatter.

This Kyocera knife is a quintessential ceramic blade.

Kyocera has been on the forefront of ceramic knifemaking for quite some time, and the Revolution Series is their latest offering.

The 7″ blade is on the smaller size for a Chef’s knife but you’ll find longer versions available as well.

The handle is a contoured, lightweight, non-slip resin that should be quite comfortable in your hand.

If you’re looking for a lightweight, sharp and maintenance-free Chef’s knife, this Kyocera is an excellent choice.

If you’re looking for the sharpest knife in the block that is guaranteed not to chip or shatter, look at a premium-steel Japanese knife like a Shun Classic.

Frosts Mora 840 Clipper High-Carbon Bushcraft Knife | Mora of Sweden Survival KnifeA great bushcraft knife for under $20? There’s got to be a catch, right?

Actually, no. This bushcraft knife from Frosts Mora (aka Mora of Sweden) has everything you need in a survival knife and it doesn’t cost an arm and a leg.

The blade is made of high-carbon 1095 steel. That’s not top-of-the-line but it’s a fine choice that helps keep the price of the knife down. It’s hardened to a Rockwell Hardness of 59, which allows it to be quite sharp.

Note that this knife is also available in a stainless steel — that model is the 860 Clipper.

Out of the box, the blade will be sharp and easy to keep that way. Some have complained that the factory edge is a bit inconsistent. The steel blend and bevel of this knife, though, make for easy resharpening. If you’ve got decent sharpening skills, you should be able to create an excellent edge.

The blade measures 100mm, or just under four inches, while the length of the entire knife is just over eight inches (210mm).

The handle is plastic, with a rubberized, non-slip grip. It has an undersized finger guard for protection, though some people might wish for none at all.

The knife is very lightweight — so much so that you may even forget you’re wearing it. As such, it’s not really intended for heavy-duty tasks. If you want something for that, the Fallkniven H1 would be a better choice.

There are definitely pros and cons with this knife, but for the price you really can’t go wrong.

This knife is from their Professional series and has all the characteristics of a great bushcraft knife.

The blade is made of high-carbon A2 steel and is hardened to a Rockwell hardness of 59-60. This makes it extremely sharp and easy to resharpen. But beware, it is not stainless so requires proactive cleaning after use or else it will rust.

The blade measures 4.25 inches and features a full-tang that is exposed throughout the handle. It extends beyond the end of the handle, creating a lanyard loop for secure attachment.

The handle is black micarta for a non-slip grip in any weather. Micarta ages well and should not chip or stain over time.

The blade is 4 inches of powdered 3G steel. Fallkniven feels so confident that this is one of the best steels available that they abandoned the revered VG-10 steel that they had been using to make this blade as recently as two years ago.

The handle is a sticky, textured Kraton rubber for a firm grip in any type of weather.

There is no finger guard on this blade so it may not be appropriate for a novice. In particular, any stabbing motion is a minor injury risk, though the majority of cuts with this knife should be of the slicing variety. That, coupled with the sticky rubber grip should minimize the danger.

Included is a leather sheath.

The handle features a micarta grip that will not wear down and should be appropriate for any weather conditions. It has an undersized finger guard that can come in handy when using the extra-fine blade point, as well as a comfortable choil for extra control.

Included is a sheath in tan or green.
