This four-inch Shun Paring Knife is the all-steel version of one of the best paring knives available today. While the D-shaped handle may seem a little slick to some, it completely eliminates worries about crevices where bacteria could hide and gives the knife an unmistakably clean look. The four-inch blade will fit larger hands than Shun's smaller paring knives and puts this blade at the low end of the utility knife range.

The handle itself is something you quickly get used to -- large enough to grip in the palm comfortably with a flat side that orients the blade and gives the user complete control of the cutting edge. The blade is the true gem here, forged from Shun's Damascus-style stainless steel. Sixteen thin layers of high tensile stainless steel on each side give the harder core of VG-10 steel extra support and strength. The VG-10 cutting edge is ground to an acute angle impossible to hold in the more resilient supporting layers. That gives this knife a strong blade and long-lasting cutting edge that outdoes western knives in cutting ability.

You may think it's expensive for a paring knife, but consider that the paring knife is one of the blades you use most often. It makes sense to put your best knife in the most useful area. The little chores you consider most tedious will go better if you allow yourself the best tools.

Shun knives require special honing systems and may chip if used on hard surfaces like glass, ceramic, or bone. Protect the cutting edge by hand washing and by storing the Shun Paring Knife in a good knife block.

Buck explains the 183CM Camo Alpha Crosslock (PBS) as a Portable Butcher Shop. Although the small size of this knife also works well for small game, the bone saw blade makes field dressing larger animals like deer possible as well. If you hunt quail, you'll need Buck's regular bird hook knife instead -- the gut hook on this knife is meant for opening the body cavity of larger prey.

The three-inch modified spear point blade extends a hollow ground plain edge for butchering and skinning, while the saw blade handles heavier bone. The saw's gut hook tip slips through the first layer of the belly to open up animals without puncturing entrails. If you're not a hunter, this stout folder has many features that come in handy for general survival purposes. The gut hook could slice safely through harness straps and, although short, the saw blade will cut through wood if you're patient.

Both high carbon 420 HC stainless steel blades open one-handed with thumb studs on opposing sides. Rotate the aircraft aluminum milled handle in the hand to locate the correct thumb stud -- the two blades fold into opposite sides of the RealTree camo handle frame. Dual liner locks work well enough when the knife is kept clean, but be cautious if the knife becomes clogged with debris. The skeletonized handle reduces weight but provides many gaps for dirt and problems to enter. Especially if you're going to butcher animals with this knife, you'll need to pay close attention to cleanup, not only because of cross contamination problems but for proper lockback of the blades.

The 4.83-inch folder comes with a camo nylon belt sheath with snap closure. The Alpha Crosslock is also available in gunmetal gray.

Whether you're trying to break into the Professional Lumberjack circuit or want an excellent tool for the homestead, the Lumberjack Competition Axe from ProChainsaw is the right choice. At 5.4 pounds it may seem heavy -- if all you've ever used before is an ordinary hardware store version. Those are toys. This is the real thing.

The high carbon steel head of this single bit poll axe is 7 1/2 inches long with a flared cutting edge a full 7 inches wide. The head is flat ground for less resistance in the cut and the edge is rolled for extra strength. With some fine tuning by hand this racing axe will make an excellent trainer and is good enough for actual entry level lumberjack competition. Master the basics with this one before spending the several hundred dollars a professional level competition axe will cost.

For work, you'll need nothing better than this. If you like to work by hand you'll find that for logs of less than sixteen inches in diameter an axe of this quality will just about match a chainsaw in speed. Plus, you can hear the birds in the trees while you work and breathe fresh air instead of oil smoke and gas fumes.

A leather edge sheath is available for this fine China-pattern axe, which comes fitted to a high quality handle of American hickory and pinned with a steel cross bolt for extra safety.

The Coast Grandpa knife -- made by Coast Knives of Portland, Oregon, but designed by Zweibruder (Puma Knives) -- shows the classic American Bowie pattern as influenced by European weapon smiths. More a piercing weapon than a chopping blade, the upswept point and false dagger edge would be at home on a European battlefield. In America, things just got a little bigger -- the Grandpa Stag Bone Bowie is nearly 12-3/4 inches long overall with a blade a full 8-1/2 inches in length.

Some weight has been shed compared to heavier and older Bowie styles, but the blade stock of nearly one-quarter-inch thickness and the full-width, full tang handle construction still qualify this as a heavy blade. The knife has a simple frontier look with a straight finger guard and double pinned stag bone handle, but the beautifully curved blade and the wide brass bolster give this Bowie a classic look.

For hunters who really do hunt big game, this knife in 440C German high carbon stainless steel could be a good dependable hunting and skinning knife. The blade's shaped well for piercing and is certainly heavy enough to pry apart joints, chop through bone, and still do the delicate work of skinning and butchering game. Most hikers will find this knife too much for the trail, but if you spend a lot of time in the north country hunting for larger game than squirrel and quail, the Coast Grandpa could be just about right. It's a good knife without the fancy decorations that came along later. You can still see the essentials of the frontier in this one.

Readers told us that they'd like to have feeds that focused on one single category of OnlyKnives content. Apparently, the kitchen knife followers got tired of reading about pocket knives and swords. Go figure!

So we're proud to announce three new feeds — one for kitchen knives, one for pocket knives & outdoor knives, and one for martial arts weapons, swords & replicas.

Our original feed still exists and still includes everything on OnlyKnives so, if you're interested in everything sharp and pointy, stick with that one.

If you're reading this via RSS and want to switch to one of the new, specialized feeds, simply unsubscribe from the old feed and click here to choose your new feed. That link is also accessible from our homepage (look for the RSS icon).

We've also created email lists that mirror our RSS feeds so, if you'd rather keep in touch via email, you can check those out on the homepage as well.

Enjoy, and let us know what you think!

With H&K's liner lock system, this tactical folder opens and closes with just one hand, without the complications of a true automatic knife. Thumb studs and locking system work as well for lefties as for the right-handed user. Fully open, the drop point blade locks securely -- release the lock with the push of a thumb, and the blade folds back into the handle with only a little back pressure. Closed length is 4-3/4", and the handle of aircraft-quality aluminum is large enough to grip easily. Textured synthetic inlays provide an extra non-slip gripping surface.

The blade and metal parts of the handle show a smooth bead-blasted finish that's polished but low glare. H&K chose 154CM stainless for the blade, with rust resistance and the ability to keep a razor edge. At less than half a pound including the reversible stainless steel pocket clip, the tactical liner lock is still large enough to qualify as a dependable and fast emergency knife. In everyday use the convenience and solid feel would be addictive.

H&K (Heckler and Koch of Germany) manufactures an extensive line of weapons including pistols and assault rifles intended for police and military use. H&K knives built to the same standards are highly rated by the same elite users. Many of the tactical knives are true automatics, but H&K also builds practical one-handers and assisted opening knives for the general public. This tactical liner lock is a good example of how their high-grade military designs are adapted for civilian use.

For collectors of anime swords and for fanatical fans of the game Ninja Gaiden, this 42" katana will be a familiar friend. The mainstay weapon of hero Ryu Hayabusa, the Dragon Ninja Katana was essential to both victory and revenge. The original Dragon Sword was said to be forged from the fangs of a dragon; this full tang weapon, with a polished 30" blade, is forged from high carbon stainless steel but is a good match for the legendary katana.

The simulated rayskin handle comes in a choice of red, white, blue and black, with a dark hued wooden sheath to match, although an old game cover depicts the sword in red. (The Dark Dragon Sword, counterpart weapon of the hero's arch rival, might also be found here). The gold colored metal hilt matches the pattern of the game weapon's hardware, and similar gold metal trimmings decorate the butt of the sword and the scabbard. A strap is included for over the shoulder wear in the ninja warrior style.

As with any good blade there will be an impulse to take a swing and test it out, but construction of an anime reproduction sword is weakest when it's a complex build like the katana. Katanas aren't just hunks of steel. This sword was built to be a tangible symbol of the powers in the game and will do best on display.

Four inches in length closed, the Old Timer holds three carbon steel blades in the most needed patterns of farm and workplace. The main blade, at a full legal length of 3 1/2", is the piercing clip point pattern; a straight edged sheep's foot for accurate shaving work and a curved point spey blade for slicing complete the array.

None of these blades locks back when opened, so the things your father told you never to do with a knife whose blades can fold back on your fingers really ought not to be done. The blades are thinner than some from the competition--the flat grind makes them a little stouter, but also requires a little more work to get the edge into razor condition.

Handle construction is stout and reliable, with brass liners and nickel silver bolsters. The handle slabs have the look of aged bone, with a rough sawcut surface that aids the grip--the material is actually Delrin, a synthetic with more durability than bone and the same aesthetic appeal.

The cautionary things I have to say about Schrade knives all have to do with the temper. The manufacturing process is based on large lots, and there's a bit of variation within those numbers. Some knives will be better than others of the same model. I've had good Schrade knives, and I've had others that quickly found their way to the glove compartment where I wouldn't have to see them again. I should probably have sent those back to the company--they do have a solid guarantee.

Instead of a heavy multi-tool with a host of options no fisherman needs, consider the Pro Guide Camp Combo from famous lure maker Rapala the next you head for the lake or stream. This kit places a 5" (closed length) surgical steel filet knife and an 8" pair of long nose pliers right on your belt in a secure nylon pouch.

The stainless steel knife, with a blade length just under 5" and big enough to handle most fish, locks in open position for safe work. The durable polymer handle is comfortable and easy to grip under wet and slippery conditions. Depress the locking lever and the blade closes safely with one hand. You'll need the filet knife mostly on the cleaning table, but if you string a wrist loop through the lanyard hole you can even use it for other work while you're hip deep in the river or leaning over the gunnel of your boat.

The pliers have been designed for fishermen, with extra long jaws for disgorging hooks, jaw spaces for crimping split shot, wire cutters on the side for rigging wire leaders, and smooth jaw flats for tuning lures. Nickel plated to slow corrosion, the tool steel pliers have cushioned handles for better gripping on cold days. The Camp Combo offers all the basics in a convenient pocket sized belt sheath.
