Hamilton Beach's Carve 'n Set Electric Knife makes carving cooked meats and bread easy. You even get a carving fork and storage case to go along with this handy tool. Plug the cord into the wall outlet, squeeze the trigger switch, and twin reciprocating blades with durable serrated edges shear meat which often crumbles under the touch of an ordinary knife.

With 100 watts of power, the Hamilton Beach Electric Knife should handle any carving job, but use a heavier old fashioned knife for food that needs chopping. This won't cut through bones unless they're very small, and isn't designed for vegetables with a hard rind like squash. The knife should cut through the food effortlessly -- too much downward pressure can cause the blades to flex and fill the gap between with bits of food, bringing a halt to the clean cut the knife normally provides.

Blades pop out of the power pack handle for cleaning, but removing and replacing them can be tricky. If limited dexterity due to arthritis or other problems is your reason for purchase, you may find this knife a difficult machine to maintain. Cleaning the 7-1/2 inch serrated knife blades should be done by hand, not in the dishwasher. The carving fork in the set can go through the machine without problems.

In general, it's a good electric knife but not heavy duty, and the 7-1/2 inch cut is a little short for home baking.

The last electric knife we posted was the Black and Decker SlimGrip. Since the SlimGrip leaves something to be desired, we thought we'd offer a different option for your holiday carving needs: the Sonic Blade 7865.

The knife's biggest feature is the fact that it's cordless and comes with a recharging station. This comes in really handy if your holiday traditions involve carving the turkey on the dining room table instead of 4 feet away from the outlet in the kitchen.

The Sonic Blade comes with two different knife blades that are both easily interchangeable depending on what you need to cut. The main knife boasts a "5-in-1" design, able to cut meats, veggies, fish, fruit, or items requiring small precision detail. The second knife in the set is a "micro-slicer," designed to cut lighter types of foods like bread or cheese.

Both blades are made from high quality stainless steel and are serrated along the entire edge of the knife. And they're conveniently sized, too. When attached to the handle, the knife roughly measures 10 x 8 x 12 inches. Plus, you'll like that the blades are dishwasher safe.

Its handle comes with a non-slip grip coating on the outside, as well as a safety locking mechanism near the power switch.

However, it seems that this knife isn't meant for everyday use. The battery life isn't as long as we'd like to see, and the weight isn't that light either. But if this is going to be used primarily for holidays and special occasions, you shouldn't have any complaints.

The SlimGrip from Black and Decker will either be the best electric knife you've ever owned, or a complete waste of money. It all depends on what you're going to use it for.

Say, for instance, if you want a smaller, contoured grip to hold, and will be using an electric knife to cut lighter food objects such as fish and bread, then the SlimGrip will be a good purchase. The saw-tooth serrations work great for bread products. Plus, it features a trigger safety lock, so you don't accidentally slice off more than just your next piece of toast.

On the other hand, if you need a heavy-duty electric knife to use on tough meats and bone, it might not be the best choice for you. The SlimGrip's blade will wobble too much to keep a steady cut going because it's thin. Also, some customers have complained that small chunks of meat make their way into the crevasse between the blade and the handle, making it very difficult and annoying to clean. Although, it's dishwasher safe, so the rest of it shouldn't be hard to clean at all.

If you're in the first camp, and you check the retail price, you'll probably agree it's quite a bargain. Looking for something more sturdy? Check out the Cuisinart electric knife instead.

Cuisinart, a pretty common name in kitchen appliances, makes this version of an electric knife that's actually two knives in one.

The blades are interchangeable. This set comes with a bread knife and a carving blade, both of which are made from high quality stainless steel.

Its handle is ergonomically designed and "southpaw friendly," since there aren't any predetermined grip characteristics. Turning it on and off is easy too. Just push a simple button, and you're ready to carve away.

Cuisinart's electric knife also comes with a nice-looking wooden butcher block for easy storage, which also features a safety lock mechanism. This way it can be stored safely in any drawer or cabinet. And when you're ready to use it, make sure your outlet is no more than 4 feet away, since that's how long the cord measures.

Comes with a three-year limited warranty.
