The Wusthof knife roll is well-planned with elastic covers that hold knives in place and internal Velcro closures that lock down the corners of the second layer of the roll. More Velcro on the outside of the roll keeps the knife carrier shut tight. The main carrying system is a loop of Cordura strap sewn to the case in a duffel bag style. There's a pocket for a name tag or business card on the outside of the case, and access to the outside pockets via zippered closures.

The Wusthof knife roll also includes metal D-rings sewn to the ends of the bag, which accept the clips of a shoulder strap. The strap itself is not included with the bag, and the Cordura handle sewn to the bag is much stronger than the shoulder strap system.

Although this bag is good for occasional transport of your good cutlery and serves well for storage, it may not hold up to frequent heavy use. Cordura is a synthetic canvas often used for knife sheaths and tool pouches. While the cloth itself endures sunlight and resists abrasion and is moderately puncture-resistant, the stitching which holds Cordura products together is much more vulnerable to wear and tear. Inspect any weak points -- like the D-ring loops for the shoulder strap -- regularly before relying on them to support your good tools.

To keep the edge at its best don't wash the knife in a dishwasher -- hand washing and drying after use lengthens the life of both cutting edge and polish. Keep the cutting edge off hard glass cutting boards, and if you intend to use the knife for meat or poultry remember that the serrations dull quickly on bone.

Instead of sawteeth, the Victorinox curved bread knife incorporates a wave-tooth edge. There's less point here and therefore less drag and bite until the edge enters the crust of hard breads and rolls. The action's a compromise between a straight slicing edge and a pointy, serrated blade. In the cut, there's more slicing action and less sawing and snagging, which can be an advantage. You'll need to use more care when starting the cut, because on truly tough crusts, the blade may skate at first unless carefully controlled.

The curved edge of the knife adds a little more trickiness to the action, since only a few teeth make that first contact during the beginning of the cut. At the end of the slice, that curved edge makes fast work of any hard bottom crust. A slight rocking motion evenly severs the bottom of the loaf.

Whether you'll notice enough difference in the product to make this technical change worthwhile is probably dependent on whether you like the look of this forged knife and its full tang POM synthetic handle. Forged in Germany from high carbon stainless steel, the dropped bolster is strong but old-fashioned. The Victorinox curved bread knife is finished to the high standards of Victorinox but is just a little too small to be a good all-around choice for homemade bread.

The shapes offered are traditional and intended only for sushi. Although they may look like European carving and chef's knives, they don't handle the same way. The forged blades are much lighter and edges are ground thin. When kept razor-sharp, they'll slice less than paper-thin -- but if used for general prep in an American kitchen, they may not last long.

Full tang handles with riveted slabs of dependable, synthetic Pakkawood (a composite of resin and layered wood with the look of wood grain but the durability of fiberglass) offer a comfortable grip and an appearance good enough for service. The catch here is the quality of the high carbon stainless steel in these full tang knives -- 420HC isn't the best and won't keep this thin edge for long, although while it is sharp, it'll cut as well as a knife of much better steel. Drawing it across a bone or a hard cutting board will degrade the edge quickly.

Keeping the knives sharp will require a set of stones and some good sharpening skills. A honing steel might do more harm than good -- the edges could turn under too much side pressure. At this level of workmanship, expect some variation in quality from knife to knife. But if you want to learn something about sushi without spending a fortune, this set is a good way to learn. All the skills you'll apply here will be equally valuable with better knives.
