This combo-serrated drop point FIN offers very little plain edge for fine cutting. Make sure it fits your purposes.

Open length of the knife is 6-7/8 inches, but only 2-3/4 inches of that is blade. The short but stout drop point blade of AUS-8 high carbon stainless steel is hollow ground and tempered to Rockwell 57-59. Edge bevel is a sharp 15 degrees made for slicing but not built to cut through nails. That actually makes this knife handy if you're looking for a good utility blade. If you really want a knife to cut well, you'll gradually hone a 20-degree bevel down a few degrees until it works. This one's already there.

The FIN's all-stainless-steel handle doesn't look comfortable, but the arched back does fit the palm well, and the grip includes a shaped bolster for extra security. Notches on the spine of the blade allow safe thumb pressure. This tactical style knife offers features convenient for everyday use as well as emergency situations. The large thumb loop in the blade allows one-handed opening without an awkward thumb stud, and the blade locks solidly into open position with a sturdy frame lock. A stainless steel clip allows secure pocket carry.

If you need a good emergency knife for the car, this model offers the basics of a good harness cutting blade and a pommel stiff enough to bash windows. Backed by Ka-Bar's excellent warranty, this tactical black folder is manufactured in Taiwan to meet Ka-Bar's high standards.

The main blade of the Bear & Son 247R is a strong hollow ground high carbon stainless steel clip point. The hollow grind makes it easy to keep a razor edge on this, but save it for the fine work where you need smooth and controlled slicing action. For prying pebbles out of horse's hooves or car tires, the shorter and stouter flat ground spey blade would do better. For flush cutting of plug tobacco, or possibly even opening boxes at the warehouse, choose the straight edge and sharp point of the sheepsfoot blade.

All three blades are slip joint types which don't actually lock in the open position. Spring bars in the spine of the handle keep open blades open and closed blades closed, but release with a firm pressure. That's always a good thing to keep in mind when using a slip joint pocket knife, because pressure on the spine of the blade folds it up even if your fingers are still in the way. The old thumb notch opening system requires two hands, and some new knives need a little oil and use before the action is just the way you want it.

All three stainless steel blades are mirror-polished as well as the nickel silver double bolsters bracketing the rosewood-slab handle. Four inches when folded, the Large Stockman isn't too large for the pants pocket, but it's at the edge of what's practical for rolling around with the pocket change. Entirely American-made, all parts for the Stockman knife were fashioned in Bear & Son's Alabama facility.

The 205R's 3-3/4-inch blade of high carbon stainless steel looks a little undersized compared to the knife's hefty handle. Bear & Son offers more grip than the Buck counterpart with large nickel steel bolsters and deftly fitted rosewood panels. Rosewood is an excellent material for knife handles, and not just because it looks great. This dense South American hardwood is packed with stabilizing resin, which resists moisture and keeps the wood stable. Hard and strong rosewood handles hold up to abuse well and keep a high polish naturally.

The lockback action of the 205R is solid, but like many traditional folding knives, the blade opens by a thumb notch and requires two hands to operate. Big enough for field dressing a deer if you're patient, the hollow ground blade has a style that's well suited to skinning or filleting small game and fish. The 205R also makes a reliable utility knife at the limit of the range that fits comfortably into the pocket.

Bear & Son Cutlery works from a single Alabama manufacturing facility. The family-owned business utilizes state-of-the-art machinery and processes but produces many traditional patterns as well as high-tech folders and multi-tools. Every part which goes into a Bear & Son knife is made in-house.

The Falcon's overall length of just over 7 inches includes 3.15 inches of AUS8 high carbon stainless steel blade hardened to RC 57-59. The pommel of this eight-ounce knife is built from Grivory, another Cold Steel product with the company's trademark durability. Though the AK-47 isn't built to be a hammer, the company says it'll hold up to moderate bashing. The pommel also provides two holes for a wrist lanyard. The knife's lock has been tested against failure in both full-force strikes and missed strikes -- the ones that place unexpected forces on otherwise reliable blade lock systems. In both instances, the knife excels.

What catches the eye isn't the blocky pistol grip handle style but the wide, hollow ground blade. Heat-treated in a vacuum for uniform tempering and then put through a sub-zero hardening process, the polished blade's fine edge shows the refinement of a good skinner but was built for tougher jobs.

Four ounces for a pocket clip folder with a three-inch modified drop point blade, probably will seem heavy to an ultra-light hiker or mountain climber concerned with every extra ounce of gear. Zinc alloy handle slabs do outweigh modern synthetics, even when they're skeletonized with lightening holes as in this knife. With liners of 420J2 high carbon stainless steel and a blade of AUS6M stainless steel, the makers did not cut weight in the wrong places. The Long's Peak is dependable and will be popular even with owners who don't climb the high country.

Available in either plain edge or serrated edge styles, the Long's Peak offers a long lasting razor edge in either build. Torx screws used in the handle and the pivot bearing allow adjustment but seldom need tuning. The Long's Peak knife opens smoothly with one hand, using the left or right-handed thumb system, and locks into place with LAWKS -- one of the most secure locking mechanisms on the market.

The LAWKS (Lake And Walker Knife Safety) system uses a thumb-controlled lever on the spine of the handle to prevent accidental blade closure. Open the knife with the thumb stud and push the lever forward -- the knurled knob stays low and out of the way and pressure on the blade only increases the lock security. Pull the lever back to smoothly close the blade again. There's no possibility of releasing the lock by squeezing the handle too hard, as with many liner lock knives, and twisting the handle won't pop the LAWKS out of position. Save two ounces somewhere else -- the Long's Peak is worth the weight.

With enough diameter to provide excellent twisting leverage, the combination of large grip and small sharp blade makes the knife an extension of the hand. With less tension required for holding the knife, cuts become more accurate and the work is less tiring.

Blades and handles are solid 18/10 cutlery stainless steel. Very resistant to stains and corrosion, this set holds a high polish as well as a cutting edge. The edge itself depends on fine serrations to cut steak and resist the dulling effects of hard dinnerware. When the first razor-edge wears off, the knives still cut well and the set should be serviceable for years without sharpening.

The slim build of the handle looks great with any contemporary flatware, but the straight and slick metal doesn't offer much grip. This is an entirely different approach than the wide blades and large handles of many more rustic steak knife patterns. Some will like this minimalistic design, but for diners used to steakhouse-style steak knives, the shift could be a shock. In durability, the all-steel pattern has the advantage over composite builds. Although the handles are constructed in the same way as other slab-handled knives, seams between grip and tang literally disappear after assembly and polishing. Because it's all the same metal alloy, everything wears at the same rate.

With no seams to trap moisture or particles of food, the knives clean up easily with no more than a fast hand washing and drying. The 18/10 stainless steel won't blemish or rust if properly maintained, but acid foods drying on the knife could cause blemishes. Don't wash these knives in a dishwasher if you want the high gloss shine to last. Store the knives in the brushed aluminum case, not loose in the kitchen drawer.

Built thinner but just as solid, this 3.2-ounce, one-handed opening knife slips neatly into the pocket with a barely noticeable profile.

Dual thumb studs allow opening from either side of the blade, and the wide stainless steel pocket clip reverses for tip-up or tip-down carrying. The Hyper's tactical black coating eliminates the shine of the AUS-8 high carbon stainless steel blade and all other visible metal parts. An internal frame lock holds the blade securely in the open position and releases easily.

The Hyper extends to a full length of 6-1/4 inches with a wide handle and a comfortable grip of fiber-reinforced dark nylon. Textured handle slabs provide a non-slip surface enhanced by grip-zone notches and shallow finger choils. There's considerable strength in the wide blade of the Hyper and an improved cutting design. Length of cutting edge is actually slightly longer than the 2-3/4-inch blade because of the slight recurve at the base. That shallow concave section focuses cutting pressure near the handle where the leverage advantage is greatest. When cutting heavy material like rope or seat belt webbing, the material sinks deeper against the cutting edge as it moves forward on the blade. Even with a plain edge, the knife grips as it cuts.

Even the Hyper's stainless steel pocket clip seems better than average, wider than the standard clip and strong enough to actually keep the knife in place. Conservative in size, the Hyper packs a lot of quality into a small package.
