I got my first 430-10 Forschner about 30 years ago. Somehow it vanished-so I got another. It’s the 10″ version with Rosewood handle,however,same steel and shape. I like the balance and feel of the wood…though partly out of habit. I used my original a dozen years in various restaurants. Now I’m cooking at a college and its 10X the quantity so my Forschner gets a LOT of action. All the other cooks love to borrow it. These can take a more acute angle than what comes out of the box. If you know how to sharpen….they can be VERY sharp-yet rugged as a machette. The 8″ is better for home use,the 10″ for large scale cooking. I test by dropping a cherry tomato and slicing it in mid-air. Dull knives don’t do that trick,they bat the tomato across the room.
