This 22-slot knife block plus paring knife from Wusthof of Solingen, Germany, is hardly enough to equip a kitchen, but if you have a set of good knives already or need a storage system for new ones, it’s a wonderful way to organize your kitchen.
The paring knife is an afterthought, a good straight edge peeling and trimming knife of stamped Solingen stainless steel with a double-riveted three-quarter-tang handle. It’s a very useful and light build without the forged blade and bolster of Wusthof’s more expensive products. The main piece in this set is the block itself, built of quality hardwood especially for Wusthof knives, but with slots that fit many other brands as well. The 22 slots include eight for steak knives, one for shears, and another that will take either a knife or sharpening steel.
The main feature of this block is the swivel base, which may or may not be an advantage depending on the layout of your kitchen. Wusthof sells other 22 slot blocks that are fixed-base models, more appropriate where it makes sense to place your block against a wall. This swivel model needs room to turn, so its best application is where you need access from two sides, as on a kitchen island or work table.
Also keep in mind that moisture and heat can cause the wood to change shape and crack, so pick a place that’s away from hot spots and steam.
