Chef's Choice Electric Knife Sharpeners, Slicers
Chef’s Choice products include small appliances and sharpening systems as well as electric slicers and kitchen cutlery. Chef’s Choice best American-made knives with forged blades and molded synthetic grips use some of the industry’s best steel. Edgecraft Corporation claims that Chef’s Choice Trizor knives hold an edge ten times longer than competitive brands, and outperform fragile ceramic knives.
Company History
Edgecraft Corporation started in 1984 in Avondale, Pennsylvania, and introduced the Chef’s Choice brand the following year. The Avondale facility still produces a full line of knife sharpeners, waffle makers, electric knives and more. Edgecraft first marketed the Chef’s Choice Trizor line of kitchen knives in 1992, using high carbon content steel originally developed for aerospace applications. Trizor steel held an edge three times sharper than conventional stainless steel blades and kept that edge up to ten times as long as the usual high carbon stainless steel.
Chef’s Choice built the first Gourmet Electric Food Slicer in 1994, adding affordable home versions of the rotary knife later. In 1995, the Chef’s Choice Model 2000 Commercial Diamond Hone targeted the sharpening needs of restaurants and other industrial users. In 1996, Chef’s Choice added a line of budget-priced knives intended for commercial uses.
Products
Chef’s Choice products include some notable industry firsts, like the first electric sharpener for Asian knives. Chef’s Choice also developed the first electric sharpener to properly hone either the 20 degree edge bevel of American and European blades, or the more acute 15 degree edge of Asian blades. Some sharpeners from Chef’s Choice offer one-step perfection — sharpening, steeling and stropping the knife edge on one machine.
If you’re looking for a sharpening system, this brand offers more than 100 models to choose from. Several models of Chef’s Choice electric slicers offer deli-cut precision for the home kitchen. For a traditional knife, choose either the budget line of kitchen cutlery in high carbon stainless steel, or the Professional Trizor 10X series with better sharpness and a long-lasting edge.

Ideal for VG-10 Steel, Coarse & Fine Grit
Manual sharpeners which work well are relatively new products -- until diamond abrasive wheels were available, the results of using a manual sharpening jig were often less than wonderful. The Chef's Choice 463 Pronto Asian Manual Sharpener applies that new technology to the more acutely beveled santoku's and other Asian ...
Diamond Hone 500, Coarse or Fine
One of the trickiest tools to sharpen correctly at home is a pair of scissors. It always looks like an easy thing to do, but unless the edges of the blades meet at exactly the right angle, you might as well just buy a new pair. The Chef's Choice 500 ...
Diamond Fine Grit
Few tools in the kitchen are handier than a sharpening steel -- except perhaps a diamond hone. The Chef's Choice 12-inch Diamond Hone Knife Sharpener is an example of what happens when you combine the cutting ability of fine industrial diamonds with the traditional chef's honing steel. The result is ...

Diamond Hone Wheel w/ Coarse & Fine Grit
The Chef's Choice 450 two-stage diamond wheel knife sharpener allows even those chefs who don't like to sharpen knives to work with sharp blades. The bevel it produces and the quality of the cutting edge won't match professional standards, but many good cooks don't care so much about the steel ...

Cooking Scissors Stainless Steel 9 Inch
Kitchen shears usually look and work like ordinary scissors. The only feature that makes them kitchen shears is that they come apart easily for cleaning. This pair of poultry shears from Chef's Choice beats that old paper-cutting design handily. The 9-Inch Poultry Shears cut meat, skin and gristle, and snip ...
Double Bevel Diamond Hone
With coarse and fine honing plates, a secure hand grip, and several aids to accuracy, the Chef's Choice Multi-Edge Diamond Hone Knife Sharpener does a good job of restoring the edges of most kitchen knives. The system isn't foolproof and shouldn't be expected to match the work of a sharpening stone. For ...
Diamond Hone Compact Electric
With only two stages of blade sharpening, the Chef's Choice 310 Diamond Hone could be over-matched by genuinely worn knives. If your knives are still in reasonably good shape, the two high-speed honing disc systems in the 310 should do an excellent job of restoring an edge. Major repairs could ...
464 Pronto Manual Western Blade
With the advent of affordable industrial diamond abrasives, sharpening systems like this Chef's Choice 464 Pronto have actually begun to work properly. Asian, Japanese Knives (Shun) | #1520 AngleSelect
Most knife buffs turn up their noses at electric sharpeners, and for good reason. There are enough crummy ones out there that it's usually good advice to just avoid them altogether. The worst of them will chew up your edges, taking off a good chunk of metal while leaving them jagged and ...

Best Electric Sharpener | EdgeCraft Electric M120
Thinking about buying an electric sharpener? Then you need to read this.

Diamond Hone Electric Sharpener #130
Using an electric sharpener is an easy way to ensure you get a consistent edge without delving into the art of manual sharpening.
But be careful which electric sharpener you use. Some are too aggressive -- they'll eat away at your blade and you'll soon be left with a useless knife.
Others don't sharpen ...
