In a forged blade, that extra length can be expensive, but the stamped steel build of this hollow ground slicer is practical as well as precise. An ergonomically designed ABS plastic handle is permanently joined to the full tang of the blade with stainless steel rivets, and the shape of the handle substitutes for the bolster of a forged design.
With a uniform thickness the full length of the blade, and rows of granton-style hollows ground into both sides of the blade, this knife makes full-width accurate slicing cuts across roasts, hams, and poultry. The hollows reduce friction and fill with lubricating juices as the blade works, so the meat falls away from the cut without distortion. This long blade's tip is rounded for safety.
