This Santoku is a seven-inch Japanese style chef’s knife. Chicago Cutlery specializes in delivering high value knives. This knife’s blade is forged and balanced like a more expensive knife. The tang — the extension of the blade into the handle — goes all the way to the end of the handle. This provides stability and safety, since the knife is unlikely to detach from the handle.
The blade is made of forged, high-carbon stainless steel, which allows for a sharp edge and easy re-sharpening. The handle is a polished, non-porous back polymer and contains forged bolsters with triple-riveted design. Chicago cutlery provides a lifetime warranty on this knife.
All in all, a good value from a well-known knife maker.
